FAQS

pickup and shipping

When do you ship?

You can choose your shipping date from the dropdown menu in the cart.

All shipments are sent on Monday or Tuesday. This is to ensure your order arrives in good form. If there's a hiccup on the shipping side of things, we'd hate to have your fish waiting in a warehouse all weekend before it gets to you.

You will receive confirmation as soon as it is on its way to you.

What are your shipping rates?

You can find our shipping rates here

How does pickup work?

We offer local pickup options in the Chicago area. You can find a calendar of events and locations here

Choose which one you would like to use when checking out. We'll send you a confirmation and look forward to seeing you!

We do not have a brick and mortar location, so we make arrangements with local businesses and customers to offer pickup locations and events. Interested in hosting a pickup location and get some free fish in the process? Drop a line and lets talk!

What kind of packaging do you use?

Our salmon are vacuum sealed. They are shipped with dry ice and Green Cell Foam, the most environmentally sustainable packaging available. Made from US-grown corn, Green Cell Foam is compostable and can even be dissolved in a sink for safe and easy disposal.

What should I do with the dry ice from my order?

We use dry ice to keep your fish frozen during transit. When removing your fish please be mindful of the dry ice. For your safety, do not handle dry ice with your bare hands.

You can leave the dry ice in the shipping container in a well ventilated area, with the lid off, and it will evaporate in 1-2 days.

We want you to enjoy a seamless delivery and unpacking experience. With this in mind, we cannot stress enough the importance of handling dry ice with caution.

How much room will the salmon take up in my freezer?

Not as much as you think.

10 pounds will take up about a half a square foot of freezer space. Because of the compact nature of salmon meat, it is very easy to store.

How long will my salmon last frozen?

Our salmon are vacuum sealed in an air free environment and are protected from dehydration or freezer burn. The quality should remain the same as the day salmon was packaged. We have found that one year is a good shelf life for our salmon.

How should I thaw my salmon?

Thawing your salmon correctly is very important in order to ensure peak quality and prevent health risks. Once thawed pat gently with a paper towel to remove excess moisture. We recommend you follow FDA guidelines for food handling and cook all products to the FDA’s Recommended internal temperatures. There are several methods of defrosting your seafood. We recommend the following:

  • Refrigerator - For the best quality remove from packaging, plate and then cover. Place it in the refrigerator 12-24 hours prior to cooking. Once defrosted your salmon will be good for up to three days. Do not refreeze it.
  • Cold Water - Submerge the salmon in a cold bowl of water leaving the it in the sealed bag. Keep submerged until it is completely defrosted, changing the water changing the water as needed. It is not recommended to thaw the salmon outside of the sealed bag. Cook immediately after defrosting.
  • Microwave  - You can defrost salmon in the microwave by following your microwaves defrost settings and instructions. While this is the fastest method we don’t recommend it as quality will suffer.

Can I eat my salmon raw?

Yes. It is our favorite way, along with many of our customers, to eat it.

Our salmon is sushi/sashimi grade. They are frozen at very low temperatures, which ensures they are safe to eat raw.

Please keep in mind, the FDA’s take is that consuming undercooked meat, poultry, and seafood products may increase the risk of foodborne illness.

Does your salmon have pinbones?

Nope. No pin bones. We remove them during processing.

What if I have a quality concern?

We 100% stand by the quality of our salmon. If for any reason you are not completely satisfied, please contact us by phone or email. We will do our very best to make things right.

Because we are shipping frozen salmon, we do not accept return orders. Instead we may send a new shipment or offer a full or partial refund.
